Shake it!

Folks, do I have a breakfast-shake recipe for you. Wait, not so fast. Just trust me on this one. I know what you must be thinking; "Eeew, a diet shake for breakfast?! aw, hail no!"

I have a general anti-shake policy (especially the super-sugary/caffeinated ones), but this shake is a lovely exception. It's yummy. And healthy. And filling. And proteinacious. Mmmm, how's that for an appetizing descriptor? I know it doesn't look like the most appealing thing in the world, but you have to trust me on this one.

Vanilla-Almond Breakfast Shake
(Adapted from the South Beach Diet Cookbook)
Makes 2 Servings

1 cup low-fat, low-sugar plain soymilk*
3/4 cup plain fat-free yogurt
6 ounces silken tofu (we just take the standard 16-oz block from the grocery store, use half of it, and save the other half for another day)
1/4 cup dry-roasted (unsalted) almonds
1 teaspoon vanilla extract
1 teaspoon artificial sweetener (optional)

*Feel free to use vanilla-flavored soymilk and leave out the vanilla extract.

Place all the ingredients in a blender. Blend until smooth, about 1 minute. (Make sure you really blend it for a full minute, otherwise you'll still have almond chunks, which are not so nice.) Serve cold.

I've made it the night before and it keeps pretty well. It thickens a bit, and some liquid separates out at the bottom, but it's much better than not eating anything on those early-morning-no-time-for-breakfast days.

I had this for breakfast this morning, and I am already looking forward to having it again tomorrow... it's that good! (either that or I need to get a life, but who's keeping track, anyway?) ;)

That actually look pretty darn good! I love the SB Cookbooks, whether or not you follow the plan, they always have some tasty things in there to make and you can feel good eating them! I am going to try this recipe tomorrow! Looks like it has lots of protein. Most women don't consume enough, and it really helps to stabilize blood sugar and build lean muscle.
I hates eating in the morning, so something like this is perfect. Thanks Ms.Mer!!

Pamela: I haven't tried chocolate soy, but give it a go and let me know how it turns out! :) Checked out your blog, and it's really fun, thanks for sharing it!

DaniBP: it does have lots of protein, and a nice amount of calcium, I think. As far as a protein source, I much prefer it to choking on a skinless chicken breast. But that's just me. :)

PFP: The shake only takes about five minutes, and sometimes I dump everything in the blender while only half-awake. Agree that making cereal in the mouth (LOL!) is much much easier. I just hope you remember to add milk? ;)

Sounds good! So, do you use 8 ounces of tofu instead of 6, or do you cut off 1/4 of the block before you start?

This shake is just what I needed tonight!

We (my "stronger" half and myself) went to the Giants game with two of his coworkers. After a really big (humiliating) lost game vs Rockies in Colorado (it was a big deal), Giants won this time on their territory. It was great but testosterone levels were too much for me 8(

I bought a special 15 year edition of In Style magazine and made your shake at home after the game- just what I needed. I did use 8 ounces of tofu for just 1 serving for myself (wasn't it easier to just say "8 ounces" instead of "half of 16 ounce package"? LOL)

Anyway, thanks for sharing that! I'll try to make a nice quick snack from my book of healthy recipes (we all have one, don't we? hehe) and I'll post it here if I find something quick and yummy.
